photo catch up time.

this is the kortright centre, where we went last sunday (march 13th) to see how it is exactly they make maple syrup. its pretty impressive in its simplicty. This lady, Peig we'll call her showed us the old fashioned way, which probably means about 10 years ago peig_cauldrons_2

Mark is amazed by how much sap its takes to make syrup this_much_sap this_much_syrup You just boil off the water from the sap, Peig takes 24 hours to boill down a cauldron-full, but Farmer Don can do the same amount in about 4 hours. Nothing added, just water taken away. I had some on my porridge this morning, its also really good mixed up with muesli and natural yogurt.
